Ground Turkey Soup with Kale

Serves 4 | 200 calories per serving Macros: 20g protein, 9g carbs, 9g fat

Prep: 25-30 minutes | Cook time: 30-35 minutes | Total time: ~60 minutes

Ingredients

  • 1 lb ground turkey (93/7)
  • 1 tbsp olive oil
  • 1 medium onion, diced
  • 1 rib celery, diced
  • 2 medium carrots, thinly sliced
  • 4 cloves garlic, minced
  • 3/4 tsp kosher salt
  • 1/2 tsp black pepper
  • 1/4 tsp crushed red pepper
  • 1/8 tsp allspice
  • 2 tsp dried thyme
  • 4 cups chicken broth
  • 1 cup chopped kale
  • 2 tbsp tomato paste
  • 3/4 cup nonfat plain Greek yogurt
  • 2 tbsp cornstarch
  • 1/4 cup grated parmesan (for serving)

Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add onion, celery, and carrots; cook 5 minutes until softened.
  3. Add garlic, salt, pepper, crushed red pepper, allspice, and thyme; cook 1 minute.
  4. Stir in chicken broth and bring to a boil.
  5. Add ground turkey; reduce heat slightly and cook, breaking it up with a spoon.
  6. Add kale and tomato paste.
  7. Simmer about 30 minutes.
  8. Mix Greek yogurt with cornstarch in a small bowl; temper with a little hot soup and stir back into the pot.
  9. Simmer a few more minutes to thicken. Serve topped with parmesan.
