Asparagus Bacon Frittata

Recipe makes 4 servings Macros (per serving): 24g protein / 32g fat / 2g carbs

An easy, protein-packed frittata loaded with asparagus, crispy bacon, and melty cheddar.

Prep time: 10 minutes Cook time: ~45 minutes (10 minutes prep + 35 minutes bake)

Ingredients

  • 6 large eggs
  • 1 cup cottage cheese
  • 1/4 cup vegetable broth (optional)
  • 1/2 cup chopped bell peppers (or any veggies you have)
  • 1 lb asparagus, trimmed and cut into 1-inch pieces
  • 4 slices cooked bacon (or turkey bacon), crumbled
  • 1/4 cup shredded cheddar
  • Hot sauce, salt, and pepper to taste

Directions

  1. Preheat oven to 375°F and line an 8x8-inch baking dish with parchment paper.
  2. In a large bowl whisk together eggs, cottage cheese, and vegetable broth (if using). Season with salt and pepper.
  3. Layer bell peppers and 2/3 of the asparagus in the baking dish. Crumble the bacon over the top.
  4. Pour the egg mixture evenly over everything.
  5. Add the remaining asparagus on top. Sprinkle cheddar cheese over the center.
  6. Bake 35-40 minutes or until set. Let rest 5 minutes.
  7. Optional: Broil 2 minutes to brown the top.
  8. Top with hot sauce and enjoy.

Make it even higher in protein

  • Swap the cottage cheese for low-fat cottage cheese
  • Trade out bacon for turkey bacon
  • Swap out the cheddar for low-fat cheddar
  • Add shredded chicken or egg whites

Storage & reheating

  • Store in the refrigerator for up to 3 days. Reheat gently or eat cold.
  • Freeze individual slices for up to 2 months. Reheat in the microwave or oven.
