Asparagus Bacon Frittata

An easy, protein-packed frittata loaded with asparagus, crispy bacon, and melty cheddar.
Prep time: 10 minutes Cook time: ~45 minutes (10 minutes prep + 35 minutes bake)
Ingredients
- 6 large eggs
- 1 cup cottage cheese
- 1/4 cup vegetable broth (optional)
- 1/2 cup chopped bell peppers (or any veggies you have)
- 1 lb asparagus, trimmed and cut into 1-inch pieces
- 4 slices cooked bacon (or turkey bacon), crumbled
- 1/4 cup shredded cheddar
- Hot sauce, salt, and pepper to taste
Directions
- Preheat oven to 375°F and line an 8x8-inch baking dish with parchment paper.
- In a large bowl whisk together eggs, cottage cheese, and vegetable broth (if using). Season with salt and pepper.
- Layer bell peppers and 2/3 of the asparagus in the baking dish. Crumble the bacon over the top.
- Pour the egg mixture evenly over everything.
- Add the remaining asparagus on top. Sprinkle cheddar cheese over the center.
- Bake 35-40 minutes or until set. Let rest 5 minutes.
- Optional: Broil 2 minutes to brown the top.
- Top with hot sauce and enjoy.
Make it even higher in protein
- Swap the cottage cheese for low-fat cottage cheese
- Trade out bacon for turkey bacon
- Swap out the cheddar for low-fat cheddar
- Add shredded chicken or egg whites
Storage & reheating
- Store in the refrigerator for up to 3 days. Reheat gently or eat cold.
- Freeze individual slices for up to 2 months. Reheat in the microwave or oven.
